Why don’t you provide the roast date on your coffees?
We understand the importance of fresh roasted coffee, and you can rest assured that we take great care to ensure quality. By roasting in small batches, we maintain the highest standards of flavor and aroma. This method allows us to closely monitor the roasting process, ensuring each batch is perfectly roasted to highlight the unique characteristics of the beans.
Although our packaging doesn't allow for roast dates, we guarantee that your coffee is shipped within 3-5 days of roasting. This swift timeline is part of our commitment to ensuring the coffee reaches you at the start of its optimal flavor window, allowing you to enjoy it at its freshest and most aromatic.
Do you offer low-acidity coffees?
Yes–if you're seeking a coffee with low acidity, we recommend exploring our selection based on origin. Coffees from South and Central America typically offer a smooth, mellow body with milder acidity. In contrast, African coffees, like those from Ethiopia, often present a brighter, more citrusy profile. While the specific taste can vary depending on the coffee variety and processing methods, this guideline can be a helpful starting point.

Why do you use a 5 point roast scale?
We utilize a comprehensive approach to determine the roast level of our coffees combining a five-point scale with detailed tasting notes and key flavor profiles. This dual approach allows us to move beyond the oversimplification often seen in the industry, where roast levels are sometimes the sole focus.
That's why we supplement the scale with in-depth tasting notes and key flavor descriptors. This holistic view respects and showcases the individuality of each coffee, providing our customers with a richer and more informed tasting experience.

Is your coffee Fair Trade® certified?
Our dedication to sustainability is at the heart of our support for small farmers. We recognize that maintaining certifications like USDA or Fair Trade can be prohibitively expensive for small, low-income coffee farms. In fact, large conglomerates sometimes leverage organic certifications to gain an unfair advantage, contrary to our mission to foster sustainable communities and small-scale agriculture.
To truly benefit these farmers, we have shifted from a fair trade model to one that emphasizes sustainability through quality, and it is more advantageous and fair for farmers. We collaborate with importers who consistently pay 30% to 60% more than Fair Trade standards for our coffee–underlining our commitment to sustainable development for the small farmers we support.
How do you ensure farmers are paid fairly?
Our approach involves multi-year contracts that provide stability and predictability, ensuring our partners can plan and grow their businesses with confidence. Importer invoices transparently list farm-gate prices, allowing for fair compensation that reflects the true value of the products.
Additionally, yearly soil-health grants support sustainable practices by providing financial resources to maintain and improve the quality of the soil, ultimately leading to long-term viability and profitability for our partners.
Is your coffee organic?
When it comes to certifications like organic in the coffee industry, the conversation is intricate and multifaceted. While it's common to equate “organic” with being inherently “better”– this perspective can overlook the complexities involved in coffee sourcing and production. Our non-organic coffee farms often achieve higher yields per acre, utilizing fewer resources and contributing to lower deforestation rates.
Given that coffee ranks as the second largest traded commodity globally, adopting more efficient farming practices is essential for minimizing the industry's environmental footprint. By expanding our horizons in search of the finest-tasting coffee, we collaborate with micro-lots, small farms, and unique producers. This approach not only supports sustainable practices but also offers our customers a rich diversity of intense and distinctive flavor profiles.
Brewing & Storage
How should I store my coffee?
We use specially designed high-barrier packaging that preserves the coffee's integrity by protecting it from moisture and oxygen, further ensuring optimal freshness upon arrival. To preserve the quality of your coffee, store it as you would valuable spices—in a cool, dry pantry. Ensure the package is sealed as air-tight as possible after each use to protect it from light, heat, and moisture.
For an optimal brewing experience, we suggest consuming your coffee within 28 days of roasting, as the tasting notes will be at their finest during this time. Although coffee remains safe to drink beyond this period, its flavor may lose some of its vibrancy.
(Our coffee can still taste delightful for up to three months or even longer after roasting. Please keep in mind that exposure to oxygen leads to degradation over time, making an airtight storage solution essential.)
How do I improve the brewing of my coffee?
Brewing exceptional coffee hinges on several crucial factors, with the quality of the coffee itself being paramount. Equally important is the amount of coffee used. Striking the right balance is essential; too little coffee can result in a weak, underwhelming brew, while too much can lead to an overpowering, bitter taste.The grind size plays a pivotal role in the brewing process. Different brewing methods require varying grind sizes to optimize extraction. Properly filtered water, ratio, and temperature should not be an afterthought since it is the foundation of every brew.
